Eating raw fruits and vegetables
has considerable health benefits. But theres not always time to
eat the recommended five servings of fruits and vegetables per day.
Drinking freshly made juice can provide the vitamins and minerals from
fruits and vegetables and also essential fluids.

What
kinds of juicing are available?
There are two basic kinds of
juicing. The first removes the fibre from the plant, and the second pulverizes
the plant, leaving the fibre intact. The first type is appropriate for
people who have sensitive stomachs and who cannot tolerate large amounts
of fibre.
What are the benefits of juicing?
Both types of juicing preserve enzymes,
vitamins, minerals, and carbohydrates present in the fruits and vegetables.
Enzymes are essential for the digestion and absorption of food and the
breakdown and elimination of body waste. Some juices also have medicinal
value. For instance, apple juice contains a type of sugar known as sorbitol,
which acts as a gentle laxative. Cauliflower and broccoli contain substances
that can keep carcinogens from reacting to body tissue.

How
can I make my own juice?
A blender may seem like
a good place to begin, but blenders will not make very good juice,
since they do not separate the juice from the pulp. If you are interested
in juicing, you should invest in a real juicer. Several types of
juicers are available, and can be found at your health food store.
Since they have a high sugar content, fruit juices should be diluted
with water on a one-to-one basis. The sooner you drink your juice,
the more vitamins and minerals will be present, as juices lose their
potency over time. Be aware, however, that most juices do not contain
the fibre of fresh fruits and vegetables, and should not be used
as a substitute for these foods.
